水稻种子过敏原蛋白的研究进展

Research progress of allergenic proteins in rice seed

  • 摘要: 水稻作为多数人的主食,其潜在过敏性问题已成为重要研究方向。综述了水稻蛋白生物学特性、种子过敏原蛋白鉴定和水稻种子过敏反应机制等方面的研究新进展。目前,关于水稻种子过敏原蛋白的研究结果丰富了其理论体系,并为过敏性疾病的防治提供了重要依据。未来应优化水稻种子过敏原蛋白的鉴定方法,探究其分子机制,探索食品加工降低过敏风险的潜力,同时加强地区监测与公众认知提升。

     

    Abstract: As a staple food for most people, the potential allergic issues of rice have been made an important research direction. The recent research advancements in the biological characteristics of rice proteins, the identification of seed allergenic proteins, and the mechanisms of rice seed allergic reactions were reviewed. Currently, the research findings on rice seed allergenic proteins had been enriched in their theoretical system, and the important basis for the prevention and treatment of allergic diseases has been provided. In the future, the identification methods of rice seed allergenic proteins should be optimized, their molecular mechanisms should be explored, the potential of food processing to reduce allergy risks should be investigated, and the regional monitoring as well as public awareness should be strengthened.
