草莓红色素的提取及稳定性研究

Study on the extraction of strawberry red pigment and its stability

  • 摘要: 介绍了从草莓 (Strawberry)中提取红色色素的方法和条件 ,并对该色素的稳定性进行了研究 .结果表明 :该色素对光、热、氧化剂 (H2 O2 )与还原剂 (Na2 SO3)及金属离子的作用稳定 ,适宜的 p H值范围为 2~ 8.

     

    Abstract: The extraction of red pigment from strawberry and its stability were studied.The results show that the red pigment is resistant to heat,light,reductant,oxidizer and keep stable in the presence of Na +?Ca 2+ ?Mg 2+ and Cu 2+ ions its stability is good in the pH range of 2~8.
