  • 摘要: 信阳菜已享誉河南省内外,彰显了信阳饮食文化的魅力,研究其形成原因,对信阳经济社会发展具有重要意义.在概括信阳饮食文化特征的基础上,从地理学视角分析了信阳饮食文化形成的基础在于信阳所在的区域地理位置和生态环境条件,认为过渡带的地理环境条件决定了信阳饮食原材料、饮食结构以及区域内部饮食文化的多样性、分异性,这些特性构成了信阳饮食文化的特质,也是信阳饮食文化的魅力所在,对这些特质应进一步加强研究.
